Simple and Healthy Vinaigrette Dressing

If you are anything like me, you probably eat a lot of salads, especially in the summer when all of the fresh produce is coming in. I like to keep this simple and healthy vinaigrette dressing on hand, to make assembling a salad quick and easy. You can keep this dressing basic, or add herbs and seasonings to change it up. If you have fresh herbs like basil or parsley on hand, this dressing is a great way to use them.

The inspiration for this recipe started as a classic dressing for a Spinach Salad. I found it tasted good on pretty much any kind of salad, and swapped out ingredients to make this much healthier, but still delicious simple vinaigrette dressing.

Simple and Healthy Vinaigrette Dressing

Ingredients

1 Cup Extra Virgin Olive Oil

1/2 Cup Organic Apple Cider Vinegar (preferably with the “Mother”)

1/2 Cup Honey

2 tsps Salt

1/2 tsp Black Pepper

Optional additional flavors: a few cloves of garlic, a handful of fresh herbs such as basil, oregano, or parsley, or a few tsps of dried herbs to taste

Instructions For Simple and Healthy Vinaigrette Dressing

Add all ingredients to a large liquid measuring cup, or bowl. Using an immersion blender, blend until the oil and vinegar come together into a creamy dressing. Taste and adjust flavorings if desired.

I like to use a glass measuring cup when making this recipe. If you add the ingredients in the order listed, you can measure in the same container you’ll mix in and save dishes!

I love this method of emulsifying the oil and vinegar together, because it takes a long time for the vinegar and oil to seperate. It always stays mostly together, but if the dressing is seperating at the bottom when you pull it out of the fridge, give it a quick shake or stir to bring it back together.

Change It Up

I used honey in this recipe, because I try to keep my intake of cane sugar low, but you can definitely swap the honey for cane sugar if you prefer that flavor. I do recommend organic sugar if possible!

For a lighter flavor, light olive oil can be used in place of the Extra Virgin Olive oil.

I usually throw a few cloves of garlic in my dressing, and definitely recommend the fresh herbs when you have those on hand. Basil is my favorite!

You could of course use a traditional blender in place of the immersion blender. 🙂
